In MY Kitchen: Strawberry Gooey Butter Cookies for your Valentine

Last night, the boy and I made some Strawberry Gooey Butter Cookies - a recipe I found on Pinterest and thought would make a good Valentine's Day treat. Here are some photos of our efforts:

OK, you cream the butter and cream cheese together.
We let them get VERY soft before we tried this.

Then add in the egg. We forgot to add in the egg until the very end. But you won't forget to add the egg in here.

Then you're ready for the cake mix.

Opening the cake mix box is a big task for little hands.
At least this box on this night was a doozy.

Once it was open, though, he did an excellent job of pouring the cake mix in.

Then we put the batter in the refrigerator and rinsed off our utensils.

Then we had a LOT of time to kill. So we watched a little Yo Gabba Gabba, played with puzzles, rode the horse, and took a bath.

OK, after about an hour, the batter was good and cold.

I put the powdered sugar in a bowl and proceeded to roll the batter balls in the sugar.

This was an attempt at showing sticky hands without really touching the camera.

I found the batter to be really sticky, even after it was chilled. I guess I could have chilled it longer, but it was pretty firm, and well, able to be rolled into balls, but still sticky. The camera was sitting on the counter, so I used the cleanest finger to snap this photo, unseen. Worked OK I guess.

The recipe says it'll make 2 dozen - we made 26.
Pretty close.

The recipe also says to use parchment paper. I did not use parchment paper because if I can help it, I don't use such things. They fall into the "too much trouble" category.

I put them in the oven for 10 minutes and that was just the right amount of time. They were easy to take off the cookie sheet - fine to have not used the parchment.

In these photos, they sort of look like raw meat hamburger patties.
I promise they were gooey delicious cookies!

I plated some up this morning just to make them look special.

Strawberry Gooey Butter Cookies - found on Cookies and Cups
makes about 24 cookies

Ingredients
  • 1 (8 oz) block cream cheese, room temperature
  • 1/2 cup butter, room temperature
  • 1 egg
  • 1 box (18.25 oz) Strawberry Cake Mix
  • 1/4 cup powdered sugar
Directions:
  1. In your mixer cream together the cream cheese and butter until smooth. Add egg and beat until combined.
  2. Turn mixer to low and slowly add in your cake mix. The dough will be thick.
  3. Refrigerate dough for about a hour or so, just enough so it's not quite as sticky.                                   (I found it to be sticky even when the dough was very cold.)
  4. When dough is chilled preheat oven to 350°                                                                                    (or if you're like me you did this at the beginning and were wasting energy that whole time)
  5. Line your baking sheet with parchment paper (I skipped this step - I live on the edge)
  6. Place powdered sugar in a small bowl.
  7. Roll dough into balls about 1 inch in diameter, then roll in powdered sugar.
  8. Place about 2 inches apart on prepared baking sheet and bake for approx 10 minutes until centers are just set.
  9. Cool on wire rack

A Cooking Fool

Today is the annual chili and dessert cook-off at work. I decided to enter some contenders, since it was on a Monday and I had the weekend to collect my thoughts. I searched the Internet for things that sounded good to me. Then, I had to narrow it down to one or two items. We also spent some time at home this weekend, which was much needed, and got some things picked up and organized. LM and I played a new game, and the photos in this post are from that time together. I didn't photograph the cooking - I know, strange, huh? By the time I got to the actual cooking, I had to sort of go full on just to get it done!

What did I make? Well, this chipotle chili recipe for one. I REALLY like this chili. It's delicious! I'll be keeping and repeating this recipe, fo sho. Then I got this silly idea that a lentil chili might be good. I love lentils, and I was looking for something maybe a little different. I found this version on the Internet. I followed pretty closely, but ended up adding a little salt and a little worcestershire sauce to it. I think those were the only modifications...anyway, it is also very nice!

Then, in the dessert category, I had LOTS of options. I mean, really, there are TONS of fabulous fall desserts. But, I decided to make these. And, I feel I might have overcooked them. That said, the combination is tasty, friends. Very tasty. And, lastly, I made one of these. It's beautiful, sister. Just beautiful. I can't wait to taste it - it appears to be rather moist, so that's good. I have high hopes.

It's going to be a busy week. First, I have a sink full of dishes to clean tonight. Ha. Second, we have All Hallow's Eve on Wednesday. Then, on Friday night, the boy and I are flying to Indiana! Yes, that's right - a VERY quick trip, because the route came up on NetsAAvers. God help us, we're flying American Airlines, which is who we usually fly, but these days is a dicey option. On top of that, this Sandy storm is just about to hit the east coast! I hope the airports are settled out after this hurricane by then, and hope AA can keep it together to get us there and back for our brief visit. And, I really need to get my hair colored soon, as the roots don't match the rest. Shocking! Oh, and of course, I have TONS of stuff go get done at work. That too. So, that'll do it. Enough for the week, huh?

Valentine's Treat: Two Ingredient Strawberry Fudge

I mentioned yesterday we made a little Valentine treat to go along with some of our Valentines (or these Valentines) to be delivered locally. I found this recipe, where else, on Pinterest. Anyhoo, I tried out the two ingredient recipe, and here is the tale:

Ingredients

What's that you say? There are THREE ingredients in that there photo? Well, yes there are. But only TWO of them are mandatory. The third one...

Not necessary, but pretty.

If you clicked through, you'll see Cookies & Cups used little hearts on the top of their fudge. I looked for these, albeit only where I was already shopping, not on a special trip or anything, and I didn't find anything. I had this colored sugar left from a trip to Dean & Deluca when I had cash burning a hole in my pocked to buy something. And I chose colored sugar. Ahem. It worked perfectly for this recipe. You'll see!

You melt the white chocolate chips, however you please.
I microwaved on this day.

Eventually, you'll have melted chips.

Then you add in the strawberry frosting.

Mix it up.

Pour it into a greased or wax papered 8x8 dish.
In your pajamas, with an antique high chair nearby.

Make it look pretty on top.

Add decoration.
Refrigerate.

Once it's set, you can pull it out of the pan and cut it into pieces. That's why I like to leave the wax paper sort of long on the sides - so it'll lift right out.

Then I used these...

I was pleased with their cuteness and presentation.

I wonder if this two ingredient plan would work for other flavors - I purchased some chocolate fudge frosting and peanut butter chips to give it a try. I'll let you know how it goes.

Super Bowl Food: Parmesan Shortbread

The last of the Super Bowl Food inspiration posts from me: Parmesan-Pepper shortbread bites. You can find the other two recent Super Bowl-esque recipes here and here. I actually did NOT find this on Pinterest. But, I got to the site via Pinterest, where I meandered off and found these.

What we have here is basically flour, butter, parmesan, seasoning, and some egg yolks. I again had to add some water to make dough. I'm dough challenged. Add them all together and then make a couple of logs like pictured above. Refrigerate the dough so you can slice it into little shortbread cookies.

Place onto a cookie sheet - with the amount of butter involved with these, greasing isn't necessary.

I cooked them until I thought they were done - golden brown and all.
They could have used another minute or so to really be super crispy.

They will crisp up a bit while cooling on wire, though.

Add them to the now-overflowing plate.
And you're all ready for FOOTBALL!
